Sushi Rice Recipe

Sushi rice is different from other rice because sushi rice is supposed to be sticky and has vinegar in it. Sushi rice should be made with a short grain rice, as medium and long grain rice do not get sticky enough to be used as sushi rice. If possible, it is best to get Japanese short grain rice, but it is not necessary.  We have a large selection of sushi rice available in our Store that can be shipped directly to you.


  • 2 cups - Short Grain Rice (Japanese if possible)
  • 2 cups - Water
  • 4 tablespoons - Rice Vinegar
  • 2 cups - Water
  • 2 teaspoons - Salt

Preparing the Rice

  1. You should rinse the rice very well using cold water until the water is clear.
  2. After rinsing the rice, you should drain it (using a collander if possible) and let the rice sit for 30 minutes.
  3. Combine vinegar, sugar, salt and mirin together in a non-metal bowl. Mix well.
  4. Add rice and water to the pot and quickly bring it to a boil, uncovered.
  5. Once boiling, reduce heat to simmer and cover the pot. Cook for 15 minutes.
  6. After 15 minutes, Remove from the heat and keep covered for 10 minutes.
  7. Place in a large glass, or other non-metal dish to cool.
  8. Fan rice while adding vingear, sugar, salt and mirin mixture.
  9. Gently stir the mixture into the rice while fanning.
  10. Fan sushi rice while adding vingear, sugar, salt and mirin mixture.
  11. Gently stir the mixture into the sushi rice while fanning.
